Tasty Tuesday: Gingerbread Cupcakes for Dogs

The Mama woofing abandoned us this weekend.

I know. How awful right? I mean, where does that woman get off thinking she can just go away whenever she wants? It’s rude. To add insult to injury? She went away to bake.  Yeah! She spent the weekend at the lake house baking human treats. OHMIWOOF! HUMAN BAKING?!You have crossed a line Mama.All the treats in this house are supposed to be dog friendly! Frankly that woman had a whole lot to make up to us. Luckily, she had a plan. She bought these super cute stocking cupcake pans almost a year ago and she’s never had a chance to use them.

All that changed this weekend. 
 
The Mama made Gingerbread Cupcakes for Dogs. Maybe I’ll forgive her after all.
 
There is just something so Christmasy about Gingerbread. Last year, we made Dog Friendly Gingerbread Cookies, but this year the Mama just knew: It was stocking shaped pupcakes or nothing.

They turned out pretty woofing good, if I do bark so myself.

Do you want to make Gingerbread Pupcakes for your dog? Anyone can make this recipe! Seriously, even those of you that are all like “My Mama doesn’t bake at all”. This recipe is for you.
You don’t need a fancy pan or special tools. If you don’t happen to have super cool stocking pans just lying around, that’s cool. A regular muffin tin will do. We like silicone. (If you’re using metal, consider using parchment paper cupcake liners)
Here’s what you need:
 
3/4 c. tapioca Flour
1/3 c. coconut flour
1/8 c. coconut oil, melted
1/2 c. blackstrap molasses
1 1/2 tsp. cinnamon
2 tsp. ground ginger
1 1/2 tsp. baking powder
4 eggs
Optional:
extra molasses
fine shredded coconut
Preheat oven to 350F.
We’re not very fancy here at Kol’s Notes and now is no time to start. This recipe is so easy: put all the ingredients in a bowl and stir.
Fill each muffin cup with just over 1/3 c. of mix. Bake for 25 – 35 minutes, until a toothpick comes out clean.
Allow cupcakes to cool. Tell your human to resist the urge to try them. I’m not going to lie pups, I was unsuccessful. Mama ate one. Then late she ate another one. the Mama is getting fat of dog treats. Try explaining THAT at the gym.
If you want to decorate them, use a pastry brush to brush a thin layer of molasses over part of the pupcake. Dust with shredded coconut.
And then sing fa la la la la, la la, la, la 
In the spirit of the season, I’ve forgiven the Mama, but she better not try this whole “human baking” stuff again. This is your warning, Mama.
