The post was about her very first encounter with the wigglin’ & giggling treat itself – jello!
We’ll that got me thinking. I’m not a big fan of strawberry anything, but maybe I could get the Mama to make me CHICKEN J-E-L-L-O!
(Yes, the Mama is not cool, so she sang that jello bit just like in the sweet sweet 80s commercials.) Maaaaaamaaaaa! Make me Jello!
We decided that a sweet vintage jello salad would be more fun than just plain jello. Remember jello salad? the Mama totally felt like June Cleaver as she whipped one up and inexplicably kept calling me “Beav” and acting like a real jerk when I didn’t respond. Sometimes that Mama is nuts.
You know how I told you that the Mama cooks the same amount of food for 9 as she would for 19? Well turns out she cooks the same amount for 2 as she would 10!
The Mama had made chicken tacos for dinner on Saturday and there were tons of leftovers, so we had some pretty darn good jello fixins.
Wobblin’ & Gobblin’ Chicken Jello
You need:
1- packet Knox unflavoured gelatin
2- cups low fat, low sodium chicken stock
Optional: delicious fixins to add- we used chicken chunks, sweet red pepper, grated carrot & cilantro (which I love and freshens up my breath.)
Pour 1/4 cup chicken stock in a glass or platic bowl. Place remiaining stock in a saucepan and bring to a boil over medium-high heat.
Stir gelatin into cold stock. Pour boiling stock into the mix, stirring until the gelatin is completely dissolved.
Now, there are two ways to make jello salad: my way and the right way! You are supposed to put the jello in the fridge to partially set, then fold in any fixins. Chaaaaa? You what? Uh uh. I don’t think so. We here at Kolchak’s Kitchen are far too lazy for that many steps. We just tossed the chicken and veggies right into the jello moulds and poured the jello mix over top. This actually worked out well, as the chicken all settled at the bottom creating nice look for the finished product!
We used silicone cake moulds, but any glass, plastic or silicone bowl or muffin cups would work. Silicone is just our favorite type of bake wear to work with as it was so easy to get the jellos out of the mould.
Not going to lie, chicken jello might be simply the best thing ever. It is SO MUCH FUN to play with! Not to mention that it could actually be good for you! Gelatin is often used as a supplement in dogs with arthritis & seizures. Imagine getting two spoonfuls of this wobblin’ & wigglin’ treat everyday. This are lucky dogs!
It turned out to be a great thing that the Mama made us eat this on the lawn, as I must confess, I had to throw mine around a bit before I ate it!
