Instead of staying home and loving up on her puggle, she’s off galivantng about a theme park that is supposed to be for children. That’s not even the worst of it, either.While she’s in California, she’s planning to cheat on me.
She’s planning to go and meet MY FRIENDS, the Labbies. It’s outrageous, I tell you. I am some kind of mad about it, but being the fine, upstanding young puggle that I am, I told that Mama of mine that f she was going to meet MY friends without me, she certainly couldn’t go empty handed.We decided to make the Labbies Pumpkin Maple Drop Cookies for Dogs.
These tasty fall cookies are SUPER easy and even fast enough that the Mama got them baked the night before she left when she was running around like a chicken with her head cut off.
Ingredients:
- 2 cup Red Mill Gluten-Free Baking Mix (or regular flour of your dog s wheat tolerant
- 1/2 cup finely shredded coconut
- 1 tsp. cinnamon
- 1/2 tsp. ground ginger
- 3 tsp. baking powder
- 1 egg
- 1 tbsp. coconut (or olive) oil
- 1 1/2 cup mashed sweet potato
- 1/2 cup real maple syrup
- 1 tsp. vanilla
- up to 1/2 cup water or coconut milk
Instructions
Preheat the oven to 350F. Line a baking sheet with parchment paper.
In a bowl, mix together flour, coconut, baking powder & spices.
In a separate bowl, beat eggs until fluffy. Stir in mashed sweet potato, oil and vanilla.
A little bit at a time, add the dry mix to the wet ingredients. Mix thoroughly. If required add coconut milk (or water) until the desired consistency is reached. (Should be sticky and easy to "drop" onto the pans.)
Drop by the teaspoonful onto the cookie sheet. Bake for 10-12 minutes, until cookies are brown around the edges and firm in the center.
