It’s Gettin’ Hot In Here

Well, not in *here* exactly. A more accurate description of BC would be “It’s gettin’ wet in here” on account of all the rain or maybe “It’s gettin’ slightly warmer than cold as balls” since it’s about 54F here today.

But somewhere, someone is having a beautiful day. My friends, the labbies,  it is supposed to be 85F at their house tomorrow. 85! Oh, sweet heat and vibrant sun, drift my way! I MISS YOU! Did I do something wrong? Did we break up? I’m sorry! I’ll do better! I promise – just COME BACK! I love you Mr. Sun!!!!

**looks out the window** Still raining. *huffy sigh* This is BS.

Mooooooom?! Whose stupid idea is it to live in a rainforest?

Since I’m doing time in the gloomiest place on Earth, I’m dreaming of blue skies and greener pastures. In honour of my labbie dabbie friends, whose Mama was SMART (*unlike mine*) and moved them out of the Northwest rain and INTO the So Cal sun – I’m posting my first tasty summer treat – Kolchak’s Koolcakes.  Here are a few shots from last summer, in warmer, happier times.

This one is green bean, venison & carrot
This one is green pea & buffalo.

Kolchak’s Koolcakes

*1 cup quinoa or brown rice,
cooked to the point of *extra mushy*
*approx. 1/2 cup chicken stock
*1 cup flavouring – thoroughly cooked
we use carrot, green beans, peas, turkey,
chicken, buffalo, lamb, sweet peppers, fish – the sky is the LIMIT!
Combine quinoa/rice and flavouring in the blender. Add enough chicken stock to blend smoothly. Pour into ice cube trays, muffin tins, popsicle molds (without the stick) or silicone molds. We prefer to use silicone muffin trays or silicone mini cake molds as they are the easiest to get the treats out of.

When Mom wants to be *extra* fancy, she will layer two or three flavours to make something really special.

Place treats in freezer and freeze until solid.

So labbies, until it gets nicer here, we’re living vicariously through you! Throw some steak on the barbie, lounge in the sun and have a coolcake for us. Only 70 – 100 days until summer hits BC right?
